I know i've been on a cauliflower kick recently but its just so good, and so easy! This is definitely my go to cauliflower dish; its easy to make, it feels light, its so flavorful and best of all Ayla loves it.
INGREDIENTS:
- 1 lb ground beef
- 1/2 head of cauliflower
- 1 tablespoon olive oil
- 1 small onion diced
- 1 tablespoon ground cumin
- 2 cups chicken stock
- 1/4 cup chopped cilantro
- 4 crushed garlic
- salt and pepper
INSTRUCTIONS:
- Sautee cauliflower in olive oil for a few minutes or until slightly brown (this is an optional step but I think it gives it some more flavor and looks more appealing than a bare white cauliflower)
- Set cauliflower aside
- brown the beef, onions and salt and pepper
- add the cauliflower, chicken stock, and cumin
- cover on low for 5-10 minutes (until the cauliflower is tender but not too soft)
- add the cilantro and garlic in the end
- cover again for another few minutes
- serve with lemon wedges, white rice and/or pita bread
